Cucumber and Cilantro Salad
This salad is so simple and refreshing! Traditional cucumber salad (sliced cucumbers with distilled vinegar, salt, and pepper) has become a staple side dish in Jason's family during the holidays. In Cozumel, we had a delish version of a traditional cucumber salad.
Ingredients:
- cucumbers, thick sliced and then cut in halves
- fresh chopped cilantro
- rice vinegar (I use the toasted garlic flavor)
- Light Italian dressing
- salt and pepper to taste
Directions:
Mix everything together! haha. The longer the salad marinates, the better! I just "eye-balled" the amounts for the vinegar, italian dressing, and seasoning. You really don't need too much italian dressing- just a dash! The vinegar is sort of like the dressing for the salad- so you don't need to drench the cucumbers.
This really is so good- you should try it!
