Crock Pot Monday: Taco Soup



I've eaten taco soup before but it wasn't cooked in a crock pot. This was really good and super simple! Just dump everything in and cook on low for 6-7 hours. It turned out a little thicker than regular taco soup- so next time I think I will add a little more liquid. The beer gave made the soup a little tangy- a great addition!

Ingredients:
- 1 onion, chopped
- 1 can of black beans, drained
- 1 can of white beans, drained
- 1 can of fiesta corn, drained
- 1 (8 ounce) can of tomato sauce
- 1 can or bottle of beer (12 ounces)
- 1 can of rotel
- 1 package of taco seasoning
- 1/2 pound of lean ground beef (or 1 pound of boneless chicken breasts)

Top with sour cream, shredded cheese, avocado, tortilla strips, etc. Voila!
