Honey Seared Chicken


YUM. Do yourself a favor and try this!

Ingredients:
- 1 cup of cornstarch
- 1 cup of broccoli florets
- 1/2 whole red pepper and green pepper, sliced thin
- 1 tablespoon of soy sauce
- 1 clove of garlic, minced
- 1 pound of chicken breasts, cut into pieces
- 1/4 cup of honey
- salt and pepper
- olive oil

Directions:
1) Heat a large skillet over medium high heat and add about 1 tablespoon of olive oil.
2) Add the veggies with a sprinkle of salt and pepper and saute for about 5 minutes, until soft.
3) Add in soy sauce and garlic and stir so veggies are coated. Remove everything from skillet and set aside.
4) Season chicken with salt and pepper. Re-heat skillet with a little more olive oil.
5) Dip chicken pieces in corn starch and add to skillet. Let brown for 2-3 minutes, then flip. Continue with remaining chicken pieces (in batches if needed).
6) Once chicken is cooked, add veggies back to the skillet.
7) Add honey and mix thoroughly to combine. Taste and season with more salt, pepper, soy sauce, honey, etc. if needed.
8) Serve over rice. Voila!
