Homemade Crepes


YUMMMM! That's pretty much all I have to say about this.

Every time I eat crepes I think about this clip in the movie Talladega Nights: The Ballad of Ricky Bobby. How funny are Will Ferrell and John C. Reilly in that movie?!



I came across this recipe while looking at this breakfast blog post. I love dessert crepes so much! I did not realize how easy they are to make. Virtually everything you need is stuff you probably keep on hand. You can put whatever you'd like in the inside and on the outside. I've been stuck on Nutella lately, so inside of these crepes I put: Nutella, French vanilla cool whip, and strawberries.

By the way, if you haven't tried Kraft's French vanilla cool whip, you are missing out! That stuff is so good. I haven't tried the cinnamon kind yet.
Ingredients: (yields a large bowl full of batter mix)
- 2 cups of flour
- 3 eggs
- 1/2 cup of milk
- 1/4 cup of vegetable oil
- 1 teaspoon of baking soda
- 1 tablespoon of sugar
- 1 teaspoon of salt
- a dash of vanilla extract
- about 2 cups of hot water

Directions:
1) Combine all ingredients except water and whisk together in a bowl. Set aside.
2) Boil about 2 cups of water. When the water starts to boil, remove the pot from the burner and set aside for a few minutes.
3) Preheat pan or skillet that you want to cook the crepes in on a little higher than medium heat.
4) Start adding 1/4 cup of the hot water at a time to the crepe mixture, whisking constantly, until the batter reaches the consistency on melted ice cream. You will need to add about 1 and 1/2 cups of water total.
5) If you are using a nonstick pan, you might not need to grease your pan. But if you are using any other kind, be sure to spray the pan with PAM before you make each crepe. Pour less than half a ladle (depending on the size and thickness that you'd like) in the preheated pan and swirl slowly. Cook on each side for about 20-25 seconds. The crepes bubble up, similar to pancakes, so you'll know when it's time to flip them.
6) Remove from the pan and fill with all of your favorite toppings.
7) Voila!
